WATER SPINACH 

‘Ong Choy’

Ideal sowing temp: 20-30C 

Position:  Sunny, swampy. 

Preparation: Soak seeds for 24 hours before sowing. 

Sowing: 5mm deep. Seeds can be sown directly or seedlings transplanted into the beds. 

Care: The soil temperature requirement for germination is 20°C. 

Sprouting: 3-10 days (at 20-30C). 

Harvest: 30-60 days. 

Chakra: Heart. 

Ipomoea aquatica.

Perennial, also known as Kang Kong, Bamboo Leaf, and numerous other names across Eastern countries. 

A short, aquatic tropical, narrow leaf variety vine that can be successfully grown in moist soil.  Grows to around 30cm tall with trailing stems that can grow to 2-3m long. Water Spinach grows rapidly at warm temperatures, likes swampy places. Best over 15°C. Can be grown as an annual or in a greenhouse in cool or cold areas, can. Also does well in hydroponic systems and is an excellent permaculture plant. 

Leaves and stems can be harvested at any growth stage once plants have become established. Young shoots eaten raw or cooked, older shoots cooked.

General note: 
Do not be too hasty to discard seed that does not germinate, seeds will often lay dormant until the conditions are similar to their natural requirements for germination to occur. Containers put to one side will often surprise long after they were discarded.
