Harvest: As needed. Do not remove more than 1/3 of the leaves at a time.
Small tree to 7m high and 2m wide, also known as the Grey Myrtle. Large clusters of creamy white flowers in spring to summer. Endemic from Southern Queensland to New South Wales and even grows well as far south as Melbourne. Young plants take time to form a good root system and will not tolerate long dry periods over their first few summers.
Leaves give off a cinnamon fragrance when rubbed and may be used in cooking, in sweet or savoury dishes. They may also be used fresh or dried, soaked in hot water, to make a tea substitute.
